Bliss Bites-Vegan & GF Energy Balls

   These adorable Bliss Bites are my favorite go-to snack for when I need a boost of energy . All you need are some dates (pitted), rolled oats (sub for almond flour or coconut flour), liquid stevia, salt, cacao nibs (or other vegan chocolate chips) and of course you need a sweet tooth



Ingredients

  • 1 cup pitted dates 
  • 1 cup rolled oats
  • 1 generous pinch sea salt
  • 2 teaspoons of stevia (option for vanilla extract)
  • 1/4 cup cacao nibs 

Instructions

  • Place pitted dates in a food processor and pulse until small bits are left. If a ball forms, use a spoon to disperse it into smaller pieces, this well help everything blend better. 
  • Next add oats, stevia, and sea salt and pulse to combine. Aim for dough that holds together well. If the dough is sticky and clings your hands, add more dry ingredients. If too dry, blend in a couple more dates at a time until you find the perfect texture. 
  • Scoop out 1 Tbsp of the dough and roll into a ball.
  • Top with cacao nibs (and maybe a side of peanut butter). Then dig in!
